Rainbow Rolls – Serves 2

These rolls are super easy to make and are great for a light lunch. Get creative with the fillings.

10 Sheets of Rice Paper 

1 Organic Carrot (Grated) 

1 Organic Apple Cucumber (Cut into Strips)

1 Organic Red Capsicum (Cut into Strips)

2 Organic Spring Onions (Cut into Strips)

½ Cup Organic Red Cabbage (Shredded)

A Handful of Fresh Mint Leaves

Edible Flowers (Optional)

Dipping Sauce:


2 Tablespoons of Chantal Organic Whole Tahini 

1 Tablespoon Ceres Organic Tamari 

1 Tablespoon Ceres Organic Toasted Sesame Oil 

1 Tablespoon Chantal Organic Rice Syrup


Submerge each sheet of rice paper for a couple of seconds in a large bowl of warm water. Place the rice paper on a flat surface and arrange the fresh ingredients in the middle of the paper, fold in the left and the right side of the paper and roll the paper from the bottom to the top taking care not to roll them too tight and making sure the ingredients don’t fall out of the sides.


To make the dipping sauce simply mix all of the ingredients together in a small bowl. Garnish with sesame seeds and spring onion.
